Celebrate Australia's Federation Centenary with Parkes family biscuits - a tasty twist on classic cookies!
Ingredients:
  • 0.66666668653488 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 0.5 teaspoon baking soda
  • 0.25 cup hot water
  • 1.5 cups chopped pitted dates
  • 1.5 cups golden raisins
  • 1.6666666269302 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C). Combine baking soda with hot water in a small bowl, then mix in the dates and raisins. Set aside.
  • Cream the butter and sugar until smooth in a medium bowl. Add eggs one at a time, then mix in the dates and raisins. Combine flour and cinnamon, and gently fold into the batter. Stir in walnuts. Place tablespoonfuls of dough on the cookie sheet, spacing them at least 1 inch apart.
  • Bake the cookies in a preheated oven for 8 to 10 minutes until lightly browned. Let them cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
