Indulge in creamy Greek tzatziki with rich yogurt, crisp cucumbers, and pita bread.
Ingredients:
  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced, or more to taste
  • 1 large cucumber
  • 1 (17.6 ounce) container full fat plain Greek yogurt (such as FAGE Total®)
Instructions:
  • Combine the olive oil, vinegar, and garlic in a bowl, allowing the flavors to meld as you get the cucumber ready.
  • Peel the cucumber, cut in half lengthwise, and scoop out the seeds. Grate the cucumber using a cheese grater into a sieve placed over a bowl. Sprinkle with salt and press down in the sieve to remove excess liquid. Or wring out the cucumber in a clean tea towel. Combine the cucumber and yogurt with the garlic mixture. Mix well, season with salt to taste, and enjoy!
