Make mouthwatering homemade gyros using this flavorful meat recipe, then assemble in pitas with lettuce, tomatoes, tzatziki sauce, and feta for an authentic Greek feast.
Ingredients:
  • 0.25 cup chopped red onion
  • 1 tablespoon minced garlic
  • 1 tablespoon dried marjoram
  • 1 tablespoon ground dried rosemary
  • 2 teaspoons kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 pound 93%-lean ground beef
  • 1 pound ground lamb
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Finely mince the red onion in a food processor, then wrap it in cheesecloth and squeeze out excess moisture.
  • Add the onion back to the food processor, along with the garlic. Process until the garlic is fully incorporated, then add the marjoram, rosemary, salt, and pepper and blend until combined.
  • Combine the ground beef, ground lamb, onion, and seasoning mixture in small batches, processing until well blended each time before adding more.
  • Press the meat mixture firmly into a 9x5-inch loaf pan, making sure there are no air pockets.
  • Roast in the oven until fully cooked through, approximately 1 hour and 15 minutes, ensuring the internal temperature reaches 175 degrees F (80 degrees C) when tested with a meat thermometer.
  • Drain excess grease and thinly slice before serving.
