Savor Chef John's succulent gyro filling with a tantalizing blend of lamb, beef, and flavorful spices - simply slice and create your perfect gyro.
Ingredients:
  • 1 pound ground lamb
  • 1 pound ground beef
  • 0.5 cup finely diced yellow onion
  • 4 cloves garlic, crushed
  • 1 tablespoon minced fresh rosemary
  • 2 teaspoons dried oregano
  • 2 teaspoons kosher salt, or to taste
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 0.125 teaspoon ground cinnamon
  • 0.125 teaspoon cayenne pepper
  • 2 tablespoons dry bread crumbs
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly oil a 9x13-inch baking dish. Line the dish with parchment paper, making sure it extends up the sides, and remember to turn the parchment paper over so the oiled side is facing up.
  • Combine ground lamb and beef with onions, garlic, rosemary, oregano, salt, pepper, cumin, paprika, cinnamon, cayenne pepper, and bread crumbs in a mixing bowl. Mix thoroughly until combined. Press the mixture into a baking dish evenly, packing it tightly to the edges for a dense texture.
  • Bake in a hot oven until golden brown, for 40 to 45 minutes. Use an instant-read thermometer; it should register at least 160°F (70°C) when inserted in the middle. Let cool to room temperature, then move to a plate, cover with plastic wrap, and chill in the refrigerator for 1 to 2 hours.
  • Place the meat on a cutting board. Cut it into 3 pieces crosswise, then slice each piece into thin 1/8-inch slices as desired.
  • In a skillet over medium-high heat, sear the slices in oil until they are beautifully browned on each side, around 2 minutes per side.
