Create authentic Italian fresh pasta at home with just flour, eggs, and salt. No pasta machine required!
Ingredients:
  • 2.25 cups Italian-style tipo 00 flour
  • 1 pinch salt
Instructions:
  • On a marble or wooden work surface, create a well in flour and crack eggs into it. Sprinkle salt over eggs. Use a fork to gently beat the eggs, gradually blending in the flour until it forms a runny mixture. Using a bench scraper, pull in the remaining flour until a dough ball forms.
  • Gently knead the dough by flattening the ball, stretching it, and folding the top towards the center. Rotate the dough 45 degrees and continue this process until the dough becomes soft and smooth, approximately 10 minutes.
  • Form dough into a ball, then refrigerate in a covered bowl for 30 minutes to 1 hour until firm.
  • Create your own pasta by rolling out the dough using a pasta machine or a rolling pin, then cut it into your preferred shape.
