Authentic Mexican enchiladas: Corn tortillas soaked in homemade sauce, fried, and stuffed with queso fresco and flavorful fillings.
Ingredients:
  • 6 dried chile de arbol peppers
  • 0.75 cup water, or as needed
  • 1 clove garlic
  • 1 teaspoon salt
  • 1 cup vegetable oil for frying
  • 18 (6 inch) corn tortillas
  • 3 cups crumbled queso fresco, divided
  • 1 cup sour cream, divided
  • 1 cup shredded lettuce, divided
  • 2 medium tomatoes, thinly sliced
  • 0.5 cup chopped green onions, divided
Instructions:
  • Remove stems from dried chiles and place them in a saucepan covering them with water. Boil, then simmer for 15 minutes. Drain the water and blend chiles with garlic and salt until smooth. Strain sauce and set aside.
  • In a large skillet over medium heat, heat oil. Dip each tortilla in the sauce, then place in the hot oil. Quickly flip and fry for around 5 seconds on the other side. Transfer to a plate lined with paper towels, stacking to maintain flexibility for filling.
  • Take a warm fried tortilla and generously fill it with around 2 tablespoons of queso fresco. Roll it up neatly and place it seam side down on a plate. Repeat this process to create three delicious rolled tortillas on each plate.
  • Spread a generous layer of creamy sour cream on the tortillas, followed by a handful of crisp lettuce, three juicy tomato slices, and an extra sprinkle of flavorful queso fresco and fresh green onions.
