30-Minute Berry Salad: A delicious blend of squash, fruits, and nuts for a quick and tasty dinner option!
Ingredients:
  • 1 small butternut squash (1 pound)
  • 2 firm ripe pears
  • 1 tablespoon margarine or butter, melted
  • 3 cups finely chopped red cabbage
  • 1 small Granny Smith apple, chopped
  • 1/4 cup chopped walnuts, toasted
  • 1/2 cup raspberry or regular vinaigrette dressing
Instructions:
  • Preheat the broiler. Grease the broiler pan rack. Peel and slice the squash, and remove the seeds. Cut the pears in half, remove the cores, and brush both the squash and pears with margarine before placing the squash on the greased rack.
  • Place the dish under the broiler, positioned 2 to 3 inches from the heat, and cook for 4 minutes. Then, flip the dish. Arrange the pears on the rack with the cut sides facing up. Continue to broil for an additional 3 to 4 minutes, or until the squash and pears are tender.
  • Layer the cabbage on a large platter, followed by the squash and pears. Sprinkle with chopped apple and walnuts, then drizzle with the dressing.
