Delicious soft persimmon cookies, sweet and cake-like, perfect for autumn harvest.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground nutmeg
  • 1 cup white sugar
  • 0.5 cup butter
  • 2 ripe persimmons, pureed
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and prep a baking sheet with a touch of greased parchment paper.
  • In a bowl, mix together flour, baking soda, cinnamon, cloves, nutmeg, and salt.
  • Combine the sugar and butter until creamy. Mix in the persimmons and egg. Fold in the flour mixture until just combined, then gently stir in the chopped nuts.
  • Using a teaspoon, place small mounds of the mixture 2 inches apart on the baking sheet.
  • Simply bake in the already heated oven for 12 to 15 minutes.
