Ingredients:
  • 2.5L (10 cups) cold water
  • Salt & freshly ground black pepper
  • 340g (2 cups) polenta (cornmeal)
  • 140g (2 cups) finely grated parmesan or vegetarian hard cheese
  • 60g butter, cubed
Instructions:
  • In a big saucepan, bring water to a boil over high heat. Season with salt and pepper.
  • Combine polenta with a balloon whisk for 2 minutes until smooth. Cook over low heat for 50 minutes, stirring occasionally with a wooden spoon until creamy. Stir in parmesan and butter until melted. Serve hot.
