Soft polenta with bacon & corn

Loads of tangy Parmesan cheese makes this irresistible side dish a winner.
Ingredients:
  • 50g rindless bacon rashers, coarsely chopped
  • 750ml (3 cups) chicken style liquid stock
  • 500ml (2 cups) milk
  • 290g (1 2/3 cups) polenta
  • 420g can Corn Kernels, rinsed, drained
  • 60g (3/4 cup) finely grated parmesan
  • 25g butter
  • 40.00 ml fresh marjoram leaves
Instructions:
  • Heat a non-stick frying pan over high heat and lightly coat it with oil. Stir the bacon in the pan for about 5 minutes, or until it becomes crisp.
  • In a saucepan over medium-high heat, combine stock and milk and bring to a gentle simmer. Slowly pour in the polenta in a steady stream while stirring constantly with a wooden spoon until well combined. Lower the heat to low and cook for 15 minutes, stirring occasionally until thickened.
  • Combine the bacon, corn, parmesan, butter, and marjoram into the mixture. Season to taste and transfer to a serving dish.
