Spiced harvest muffins bursting with apple, cranberry, figs, and hazelnuts, and warm spices.
Ingredients:
  • 0.75 cup brown sugar
  • 0.75 cup white sugar
  • 3 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 cup butter, melted
  • 1.25 cups milk
  • 1 cup chopped cranberries
  • 1 cup chopped, peeled apple
  • 0.5 cup chopped dried figs
  • 0.75 cup chopped toasted hazelnuts
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C), then prepare your muffin pans by greasing them or lining them with paper muffin liners.
  • Combine brown sugar, white sugar, flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in a large bowl. Create a well in the center and pour in melted butter, milk, and eggs. Mix until smooth. Fold in cranberries, apple, figs, and hazelnuts. Fill prepared muffin pans at least 3/4 full with the batter.
  • Bake in a preheated oven for 15 to 20 minutes, or until a toothpick inserted into a muffin comes out clean.
