Pack flavorful fig-filled muffins for a delightful lunch or picnic treat.
Ingredients:
  • 250g plain flour
  • 10.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 40.00 gm caster sugar
  • 32.00 gm brown sugar
  • 60g unsalted butter, melted, cooled
  • 20.00 ml grated orange zest
  • 250ml buttermilk
  • 1 egg, lightly beaten
  • 165.00 gm fig jam
  • 2 fresh figs, sliced
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 200°C and line a 12-cup muffin pan.
  • Combine flour, baking powder, bicarbonate of soda, caster sugar, brown sugar, and 1/2 teaspoon salt in a large bowl. In another bowl, mix melted butter, orange zest, buttermilk, and egg.
  • Combine the egg mixture with dry ingredients until just combined. Fill each muffin pan with 2 tablespoons of batter. Spoon 2 teaspoons of fig jam onto each muffin, then cover with the remaining batter. Garnish each muffin with a fig slice.
  • Bake the muffins for 18-20 minutes until they are a light golden brown color and a toothpick inserted in the center comes out clean. Finish by dusting with powdered sugar before serving.
