Enhance fresh fig jam with strawberry gelatin for a delicious twist in this easy recipe.
Ingredients:
  • 3 cups mashed fresh ripe figs
  • 3 cups white sugar
  • 2 (3 ounce) packages strawberry flavored gelatin (such as Jell-O®)
  • 6 half pint canning jars with lids and rings
Instructions:
  • In a saucepan over medium-high heat, combine figs, sugar, and strawberry gelatin. Bring to a rolling boil and cook the mixture for 4 minutes, stirring frequently. Remove from heat.
  • Prepare the jars and lids by boiling them in water for at least 5 minutes. Fill the hot, sterilized jars with the hot fig mixture, leaving 1/2 inch of space from the top. Use a knife or thin spatula to remove any air bubbles inside the jars. Clean the jar rims with a moist paper towel. Secure the lids on top by screwing on the rings.
  • Position a rack in a large stockpot, fill halfway with water, and bring to a boil. Lower jars into the water using a holder with a 2-inch space in between. Add more boiling water if needed to ensure jars are covered by at least 1 inch. Cover, bring to a rolling boil, and process for 15 minutes.
  • Transfer the jars from the stockpot to a cloth-covered or wood surface, ensuring they are spaced several inches apart to cool. Once cooled, test the seal by pressing the top of each lid with a finger to ensure it is airtight. Store in a cool, dark place.
