Strawberry Fig Preserves

Create luxurious strawberry and fig jam that tastes like pure strawberries. Perfect for gifting in stunning red jars.
Ingredients:
  • 4 cups fresh figs, stems removed
  • 3 cups white sugar
  • 1 (3 ounce) package strawberry flavored Jell-O®
  • 5 half-pint canning jars with lids and rings, or as needed
Instructions:
  • Combine figs and sugar in a large saucepan over medium heat until sugar dissolves, stir occasionally. Stir in strawberry gelatin and bring to a boil for 7 minutes. Use a potato masher to mash preserves, if desired.
  • Boil the jars and lids for a minimum of 5 minutes. Fill hot, sterilized jars with fig preserves, leaving 1/4 inch of space at the top. Release air bubbles by sliding a knife or thin spatula inside the jars. Clean rims with a damp paper towel to remove residue. Seal with lids and rings.
  • Fill a large stockpot halfway with water and bring to a boil. Using a jar holder, carefully lower the jars onto the rack in the pot, leaving a 2-inch space between them. If needed, add more boiling water until it reaches at least 1 inch above the jar tops. Cover the pot, allow it to return to a rolling boil, and process for 10 minutes.
  • Place the jars on a cloth-covered or wood surface a few inches apart to cool. Press the top of each lid with a finger to ensure a tight seal. Store in a cool, dark area.
