Delicious blueberry and fig jam enhances toast, sandwiches, goat cheese, and ice cream.
Ingredients:
  • 0.25 cup blueberries
  • 2 cups quartered fresh figs
  • 0.75 cup white sugar
  • 0.5 cup water
  • 1 tablespoon lime juice
  • 0.5 teaspoon balsamic vinegar
Instructions:
  • In a small bowl, crush blueberries with a fork. Transfer the mashed blueberries to a 3 1/2-quart pot, then add figs, sugar, water, lime juice, and balsamic vinegar. Use an immersion blender to lightly pulse the mixture until smooth with some remaining chunks for texture.
  • - Place the pot over medium-high heat and stir until it boils. - Lower the heat to low and cook, stirring occasionally, until thickened, about 20 to 25 minutes. - Test the jam's consistency by dropping a spoonful onto a frozen plate, then wait 1 to 2 minutes to check if it gels. - If the jam isn't set, continue cooking until ready.
  • Once the jam has thickened, remove it from the heat and let it cool for about 10 minutes. Transfer the jam to a clean jar with a tight seal, then allow it to cool completely before placing it in the refrigerator.
