Sweet and flavorful fig jam perfect for spreading on toast or scones.
Ingredients:
  • 1 kg ripe figs, trimmed, roughly chopped
  • 500g caster sugar
  • 1 vanilla bean, split, seeds scraped
  • 1 cinnamon quill
  • Rind, cut into strips, and juice of 1 lemon
Instructions:
  • Combine ingredients in a bowl and let sit overnight at room temperature. Transfer to a pan over low heat and stir to dissolve sugar. Once boiling, simmer over low heat for 45 minutes until thick. Gently mash figs with a fork. Remove vanilla pod, quill, and rind. Let cool slightly before sealing in sterilised jars. Enjoy for up to 3 months.
