Succulent pork roast with caramelized onions and roasted butternut squash in a delectable sauce.
Ingredients:
  • 2.5 pounds boneless pork loin
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 0.5 cup dry white wine
  • 2 cups cubed butternut squash
  • 1 large onion, sliced
  • 0.5 cup applesauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • 0.5 cup brown sugar
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Season the pork loin with garlic powder, salt, and pepper. In a large oven-proof skillet or Dutch oven over medium-high heat, heat olive oil. Brown the pork loin on all sides in the hot oil for about 10 minutes. Set the pork loin aside. Pour white wine into the pan, bring to a simmer, and stir to dissolve the caramelized bits.
  • Evenly spread the butternut squash and onion in the skillet to create a flavorful base for the pork loin. Place the browned pork loin on top. Combine applesauce, mustard, soy sauce, sugar, and cinnamon in a bowl, then pour the mixture over the pork loin. Cover the pan tightly with a lid or double layer of aluminum foil to lock in the flavors while cooking.
  • Roast pork loin in a hot oven until it reaches an internal temperature of 145°F (63°C), approximately 1 hour. Rest for 10 minutes before serving.
