Indulge in a stunning Aussie pork roast.
Ingredients:
  • 5.00 gm ground cinnamon
  • 57.20 gm honey
  • 2 tsp finely grated lime rind
  • 42.00 gm lime juice
  • 2kg Pork Forequarter Roast Boneless
  • 125ml chicken stock
  • Coriander sprigs, to serve
  • Bean sprouts, to serve
  • Mixed salad, to serve
  • Sliced chilli, to serve
  • Lime wedges, to serve
Instructions:
  • Preheat a covered barbecue on high heat or, alternatively, preheat oven to 230°C.
  • Mix cinnamon, honey, lime zest, and lime juice in a small bowl. Season with salt and pepper. Massage the mixture onto the pork. Transfer the pork to a disposable baking tray. Roast covered on the barbecue with indirect heat or in the oven for 30 minutes. Pour stock into the bottom of the tray. Decrease the heat to 160°C and continue to roast covered for 1 hour and 40 minutes or until fully cooked, basting every 20 minutes with the juices in the tray.
  • Place the pork on a plate and cover it with foil. Allow it to rest for 20 minutes. Garnish with coriander and bean sprouts. Slice the pork and serve it with salad, chili, and lime wedges.
