A vibrant avocado and corn salad with a Mexican flair.
Ingredients:
  • 2 firm large ripe avocados, halved, stones removed, peeled, finely chopped
  • 1 x 410g can corn kernels, drained
  • 3 shallots, ends trimmed, thinly sliced
  • 62.50 ml chopped fresh coriander
  • 42.00 gm fresh lemon juice
Instructions:
  • In a medium bowl, mix together the avocado, corn, shallot, coriander, and lemon juice until combined. Enjoy!
