Delicious balsamic mushrooms paired with creamy avocado create a heavenly and satisfying breakfast.
Ingredients:
  • 200g Swiss brown mushrooms, quartered
  • Spray olive oil
  • 2 tsp balsamic vinegar
  • 1 firm ripe avocado, stone removed, peeled, sliced
  • 1 bagel, halved
  • Freshly picked flat-leaf parsley leaves, to garnish
Instructions:
  • Preheat your oven to 200°C. Line a baking tray with parchment paper. Place mushrooms on the tray, spray with olive oil, drizzle with balsamic vinegar, and season with sea salt and freshly ground black pepper. Roast for 15 minutes in the preheated oven until golden and tender.
  • Toast bagels until golden. Slice avocado into thin wedges. Place a toasted bagel half on each plate, top with avocado and mushrooms. Garnish with parsley and drizzle with balsamic if desired. Tip: Pan fry mushrooms in a large frying pan sprayed with oil over high heat for 3-4 minutes until golden.
