Avocado bacon stuffed chicken breasts with pesto, melted mozzarella, and panko.
Ingredients:
  • olive oil cooking spray
  • 2 large chicken breasts
  • 1 pinch salt and freshly ground black pepper to taste
  • 0.5 large avocado, finely chopped
  • 2 slices cooked bacon, diced
  • 0.5 cup panko breadcrumbs
  • 0.5 cup shredded mozzarella cheese
  • 3 tablespoons olive oil
  • 2 tablespoons pesto
Instructions:
  • Preheat the oven to 450 degrees F (230 degrees C) and lightly spray a medium baking pan with olive oil.
  • Carefully create a pocket in each chicken breast using a sharp knife, being sure not to cut all the way through. Season both the insides and outsides with salt and pepper.
  • Mix diced avocado with crispy bacon in a small bowl. Divide the mixture in half and stuff each chicken breast with it. Secure the pockets with toothpicks and transfer the chicken to a baking pan.
  • Combine panko, mozzarella cheese, and olive oil in a small bowl. Brush each breast with 1 tablespoon of pesto, then coat with the panko mixture, pressing gently to make sure it sticks to the pesto.
  • Cook the chicken in the preheated oven for 20 to 25 minutes, or until no longer pink in the center and the juices run clear. The internal temperature should reach 165°F (74°C) when checked with an instant-read thermometer.
