Impressive stuffed chicken with ricotta and walnut mixture, perfectly cooked every time.
Ingredients:
  • 1 cup part skim milk ricotta cheese
  • 0.75 cup finely chopped walnuts
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup dry bread crumbs
  • 1 teaspoon dried oregano
  • 6 boneless chicken breast halves, with skin
  • 2 tablespoons vegetable oil
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a large baking dish.
  • Combine creamy ricotta cheese, crunchy walnuts, savory Parmesan cheese, breadcrumbs, and fragrant oregano in a mixing bowl.
  • Create pockets under the chicken breast skin and fill them with the ricotta cheese mixture. Place the chicken breasts in a baking dish in a single layer and brush with oil before baking.
  • Place in the preheated oven and bake for approximately 45 minutes, or until the chicken is fully cooked through and the juices run clear.
