Avocado, mozzarella, and roasted tomato salad - a delightful side or light lunch option.
Ingredients:
  • 8 water crackers
  • 200g plum tomatoes or roma tomatoes
  • Pinch salt
  • Freshly ground black pepper
  • 2 cloves garlic, peeled and thinly sliced
  • 2 Spring onions, trimmed and finely chopped
  • 54.60 gm olive oil
  • 40.00 ml balsamic vinegar dressing
  • 40.00 ml capers, drained
  • 125g bocconcini, torn in half
  • 1 handful basil, roughly chopped
  • 2 avocados, quartered
Instructions:
  • Preheat the grill. Arrange tomatoes on a baking tray, season with salt and pepper, sprinkle with garlic and spring onions, drizzle with olive oil. Grill for 4-5 minutes until tomatoes soften and garlic is golden brown.
  • Combine the hot tomato mixture with vinegar, capers, cheese, and basil in a bowl, toss well, and set aside.
  • Prepare the avocados by peeling, removing the pits, and cutting them into quarters. Place two quarters of avocado on each plate.
  • Spoon the tomato mixture over the avocado quarters, drizzle with balsamic vinegar, and serve. To make in advance for lunch, sprinkle a little lemon juice over the avocado to keep it fresh.
