Elevate your family favorite with crispy chicken, tomato sauce, avocado, and melty cheese.
Ingredients:
  • 340g chicken breast
  • 125.00 ml plain flour
  • 41.20 gm milk
  • 2 eggs
  • 375.00 ml dried breadcrumbs
  • Olive oil cooking spray
  • 137.50 gm tomato pasta sauce
  • 1 medium avocado, sliced
  • 125.00 ml grated reduced-fat mozzarella cheese
  • Salad leaves, to serve
Instructions:
  • Preheat the oven to 220°C/200°C fan-forced and line a large baking tray with baking paper.
  • Place the chicken between two sheets of plastic wrap and use a rolling pin to pound it until it is 5mm thick. Prepare a plate with flour, a shallow bowl with lightly whisked milk and eggs, and another plate with breadcrumbs.
  • 1. Dredge a piece of chicken in flour, shaking off any excess. Dip it in the egg mixture and coat with breadcrumbs, pressing firmly to seal. Place it on a prepared baking tray. Repeat with remaining chicken, flour, egg mixture, and breadcrumbs. 2. Lightly spray the chicken with oil and bake for 5 minutes. Remove from oven. 3. Top each chicken piece with a generous tablespoon of pasta sauce, arrange avocado slices over the sauce, and sprinkle with cheese. 4. Return to the oven and bake for 5 to 7 minutes until golden and the chicken is fully cooked. 5. Serve with a side of salad.
