Avocado stir-fry with chicken, mushrooms, and snow peas - a delicious Chinese-inspired dish.
Ingredients:
  • 0.5 cup chicken broth
  • 0.25 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 clove garlic, minced
  • 1 tablespoon vegetable oil
  • 4 skinless, boneless chicken breast halves, cut into bite size pieces
  • 2 cups snow peas
  • 2 cups cremini mushrooms, stems discarded, caps thinly sliced
  • 4 bunches green onions, cut into 1-inch pieces
  • 2 large ripe but firm avocados - peeled, pitted, and cut into large chunks
Instructions:
  • Combine the broth, soy sauce, cornstarch, and garlic in a bowl, stirring until the cornstarch dissolves; set it aside.
  • In a wok over medium-high heat, heat oil until it shimmers. Add chicken and stir-fry until cooked through and juices run clear, approximately 5 minutes. Transfer chicken to a plate.
  • Toss snow peas into the wok and stir-fry for 3 minutes until they turn bright green and remain crisp. Add mushrooms and green onions, cook while tossing occasionally for about 5 minutes until mushrooms are tender and juicy. If needed, drain any excess liquid. Lower the heat to medium.
  • Add the chicken back to the wok and mix it with the vegetables. Give the broth mixture a quick stir and pour it into the wok. Fold in the avocados and let it simmer until the sauce thickens, approximately 3 minutes. Gently coat all ingredients in the sauce and serve right away.
