Avocado banana muffins - perfect for brunch or breakfast on-the-go.
Ingredients:
  • 0.5 cup mashed Avocado from Mexico
  • 0.5 cup mashed ripe bananas
  • 2 large eggs
  • 0.5 cup low-fat milk
  • 2 cups all-purpose flour
  • 0.75 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat oven to 375°F and prepare a 12-cup muffin tin with greased wells or paper cups.
  • Combine ripe avocado, sweet bananas, eggs, and creamy milk in a large bowl. In a separate bowl, gently whisk or sift together flour, sugar, baking soda, and salt. Fold the dry ingredients into the avocado mixture until just combined; be mindful not to over-mix. Finally, gently incorporate walnuts into the batter.
  • Pour the batter into the muffin tin and bake for 15 to 20 minutes until the tops are golden brown and a toothpick inserted in the center of a muffin comes out clean.
