Avocado banana walnut muffins: wholesome and sweet treat made with whole wheat flour, perfect for any time of day!
Ingredients:
  • 2 small bananas
  • 1 medium avocado, pitted and peeled
  • 2 large eggs
  • 0.5 cup milk
  • 2 cups whole wheat flour
  • 0.5 cup light brown sugar
  • 1 teaspoon baking soda
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin with paper liners.
  • In a mixing bowl, blend ripe bananas and creamy avocado with an electric mixer until smooth. Add eggs and milk to the mixture and combine thoroughly.
  • Combine whole wheat flour, brown sugar, white sugar, baking soda, cinnamon, and salt in a separate bowl and whisk until well mixed.
  • Gradually incorporate the flour mixture into the banana mixture, ensuring it is well combined. Stir in walnuts and mix for 1 minute.
  • Spoon batter into the muffin cups.
  • Bake in the oven until a toothpick inserted into the center of a muffin comes out clean, approximately 20 minutes.
