Greek-inspired omelet with feta cheese, tomatoes, Kalamata olives, and avocado - a delicious twist on a classic breakfast favorite.
Ingredients:
  • 0.75 cup feta cheese
  • 0.5 avocado, diced
  • 0.5 cup diced tomatoes
  • 0.25 cup chopped Kalamata olives
  • 1 tablespoon chopped fresh basil
Instructions:
  • Whisk eggs until they are smooth in a small bowl.
  • Heat a nonstick skillet over medium heat. Add eggs to the skillet and top one side with feta cheese, avocado, tomatoes, olives, and basil. Cook until the bottom is golden brown, approximately 5 minutes. Fold the omelette in half and continue to cook until the center is set, around 3 more minutes.
