Avocado hummus

Whip up this versatile hummus for dipping or topping skewers and kebabs.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 2 x 400g cans chickpeas, drained, rinsed
  • 2 medium avocados, chopped
  • 131.25 gm lemon juice
  • Pinch of smoked paprika
  • Lebanese bread, to serve
Instructions:
  • In a small frying pan, heat oil over medium-high heat and add 1/4 cup chickpeas. Cook for 3 to 4 minutes, stirring occasionally, until they turn golden. Remove from heat and let cool.
  • Combine the leftover chickpeas with avocado, tahini, lemon juice, and garlic in a food processor. Blend until creamy. Season with salt and pepper to taste.
  • Transfer the creamy hummus into a beautiful serving bowl. Garnish with the cooked chickpeas and any remaining flavorful oil from the pan. Dust with a generous sprinkle of vibrant paprika. Enjoy this delectable dish with warm Lebanese bread.
