Avocado hummus and asparagus bagels

Indulge in bagels with zesty avocado hummus, grilled haloumi, and asparagus any time of day!
Ingredients:
  • 2 bunches asparagus, woody ends trimmed
  • 4 bagels, split
  • 125g haloumi, cut into slices crossways
  • 1.25 gm ground cumin
  • 1.25 gm smoked paprika
  • 1 large ripe avocado, peeled, stoned
  • 400g can chickpeas, rinsed, drained
  • 42.00 gm lemon juice
  • 24.00 gm tahini
  • 62.50 ml coriander, finely chopped
  • 62.50 ml flat-leaf parsley, finely chopped
  • 36.40 gm olive oil
  • 21.00 gm lemon juice
  • 1 garlic clove, crushed
  • 1 tsp Moroccan seasoning
Instructions:
  • Toast the cumin and paprika in a small frying pan over medium heat for 1 minute until aromatic. Transfer to a food processor with avocado, chickpeas, lemon juice, and tahini. Blend until smooth. Season to taste.
  • In a small bowl, mix together coriander, parsley, oil, lemon juice, garlic, and Moroccan seasoning to create the flavorful chermoula. Don't forget to season to taste.
  • Preheat the barbecue grill or chargrill on high. Cook the asparagus for 2-3 mins, turning occasionally, until lightly charred. Transfer to a plate. Toast the bagels on the grill, cut-side down, for 1 min until golden.
  • Grill the haloumi for 1 minute on each side until charred. Then, place it on a plate. Next, lay out the bagels on serving plates and spread them with avocado hummus. Finally, top the bagels with the grilled haloumi and asparagus, and finish by drizzling with chermoula. Enjoy!
