Avocado on rye toast with ricotta

UK now favors avocados over oranges! Avocados, rich in vitamin E, are antioxidant superheroes protecting our cells.
Ingredients:
  • 1 heaped teaspoon ricotta cheese
  • 1 x 75 g slice of rye bread
  • ½ a ripe avocado
  • 1 ripe tomato
  • 1 teaspoon toasted pine nuts
  • 1 sprig of fresh basil optional
Instructions:
  • Spread the creamy ricotta cheese on the hearty rye bread or toast. Slice the ripe avocado and juicy tomato thinly, mix gently with a hint of zesty lemon juice. Season as desired and layer on top of the toast. Garnish with crunchy pine nuts and delicate baby basil leaves, if available.
