Avocado sour cream soup garnished with flaked trout, perfect for special occasions.
Ingredients:
  • 2 Hass avocados, halved, stone removed, peeled, chopped
  • 500ml chicken stock
  • 1 lime, juiced
  • 1/4 -1/2 tsp cayenne pepper
  • 1/4 red onion, finely chopped
  • 20.00 ml chopped fresh coriander
  • Sour cream, to serve
  • 80g smoked ocean trout, skin and bones removed, flaked
Instructions:
  • Combine ripe avocado, flavorful chicken stock, and tangy lime juice in a food processor. Blend until creamy and fully incorporated. Mix in a pinch of spicy cayenne pepper.
  • Pour the mixture into a medium saucepan and gently heat it for 3 minutes until the soup is warm. You can also refrigerate the soup until cold if serving for summer entertaining.
  • In a small bowl, mix the red onion and coriander. Divide the soup into serving dishes. Add a generous dollop of sour cream on each soup. Finish by topping with flaked ocean trout and sprinkling the red onion and coriander mixture over top.
