Avocado tostada with bacon, tomato, and hard-boiled eggs.
Ingredients:
  • 3 slices bacon
  • 1 avocado - peeled, pitted, and diced
  • 3 tablespoons lime juice
  • 0.5 teaspoon dry mustard powder
  • 0.25 cup light creamy salad dressing (such as Miracle Whip Light®)
  • 0.5 tomato, diced
  • 0.25 small onion, diced
  • salt and cayenne pepper to taste
Instructions:
  • Place the eggs in a saucepan in a single layer and add enough water to cover them by 1 inch. Bring the water to a boil, then let the eggs sit in the hot water for 15 minutes. Drain the hot water and cool the eggs under cold running water. Peel and chop once cool.
  • Cook the bacon in a large, deep skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on a paper towel-lined plate and crumble once cooled.
  • Combine the avocado, lime juice, mustard powder, paprika, and salad dressing in a mixing bowl. Mix in the chopped eggs, crumbled bacon, diced tomato, and diced onion until well-combined. Season with salt and cayenne pepper to taste.
