Delicious no-lettuce shrimp salad, great for BBQs or as a refreshing side dish. Swap lime juice for your preferred dressing for a personalized touch. Tangy lime adds a refreshing zing.
Ingredients:
  • 1.25 pounds cooked deveined shelled shrimp, tail shells removed
  • 3 avocados - peeled, pitted and diced
  • 1 bunch green onion tops, chopped
  • 3 large red tomatoes, diced
  • 1 large yellow tomato, diced
  • 1 bell pepper (any color), chopped
  • 0.5 bunch cilantro, chopped
  • 2 tablespoons fresh lime juice
  • salt and ground black pepper to taste
Instructions:
  • Cut the shrimp into 2-3 pieces and combine with avocado, green onion, red and yellow tomatoes, bell pepper, cilantro, and lime juice in a large bowl. Mix well and season with salt and pepper. Chill in the refrigerator for at least 15 minutes before serving.
