Avocado-infused quick bread, moist and decadent with a taste reminiscent of banana-nut bread.
Ingredients:
  • 2 cups all-purpose flour
  • 1 cup low-calorie natural sweetener (such as Swerve®)
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.75 cup mashed Haas avocado
  • 0.75 cup buttermilk
  • 1 egg, at room temperature
  • 0.5 cup chopped pecans
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease a 9x5-inch loaf pan.
  • In a bowl, combine flour, sweetener, baking powder, cinnamon, baking soda, and salt, then sift; set aside.
  • Combine ripe avocado, creamy buttermilk, a fresh egg, and aromatic vanilla in a separate bowl, stirring until well blended. Incorporate the dry ingredients into the mixture, being careful not to overmix. Gently fold in the chopped pecans before pouring the batter into the prepared pan.
  • Bake in the preheated oven for 60 to 75 minutes until a toothpick comes out clean. Let it cool in the pan for 10 minutes, then invert onto a wire rack to cool completely before slicing.
