Creamy avocado oatmeal-chocolate chip cookies - butter-free, dairy-free delight for a light, summer treat!
Ingredients:
  • 1 avocado, mashed
  • 0.75 cup white sugar
  • 2 teaspoons vanilla extract
  • 1.75 cups all-purpose flour
  • 0.66666668653488 tablespoon baking soda
  • 0.5 teaspoon salt
  • 3 cups quick-cooking oats
  • 1 cup chocolate chips
  • 0.5 cup raisins
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C).
  • In a large bowl, use an electric mixer to blend creamy avocado and sugar until smooth. Add eggs one at a time, then mix in vanilla extract.
  • In a separate bowl, blend flour, baking soda, and salt. Combine with the avocado mixture until smooth. Add oats and mix well. Gently fold in chocolate chips and raisins. Drop spoonfuls of dough on ungreased baking sheets.
  • Bake cookies in the preheated oven for about 12 minutes until the edges turn golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
