Easy no-pasta lasagna using baking mix for a rich flavor. Perfect for a quick and delicious meal, great for kids too! Serve with a side salad for a complete dinner.
Ingredients:
  • 1 pound lean ground beef
  • 1 (6 ounce) can tomato paste
  • 0.5 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 0.33333334326744 cup grated Parmesan cheese
  • 0.5 cup cottage cheese
  • 2 eggs
  • 0.5 cup biscuit baking mix
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a large skillet over medium-high heat, break apart the ground beef until no longer pink. Drain any excess fat and mix in the tomato paste, salt, and Italian seasoning. Reserve some mozzarella and Parmesan cheeses for topping; blend the remainder into the beef mixture. Set aside.
  • Smooth a layer of cottage cheese at the base of a 9-inch pie plate. Next, spoon the savory ground beef mixture over the cheese layer. In a separate small bowl, whisk together milk and eggs, then carefully fold in the biscuit mix until the batter is velvety. Gently pour the mixture over the pie, making sure to cover every inch.
  • Bake in the preheated oven for about 30 minutes until the top is beautifully browned. Sprinkle the reserved cheese over the dish once removed from the oven.
