Tangy rhubarb and sweet strawberries baked in a buttery almond crust.
Ingredients:
  • 3 cups diced fresh rhubarb
  • 2 cups diced fresh strawberries
  • 0.5 cup white sugar, divided
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.66666668653488 cup white sugar
  • 0.66666668653488 cup butter, at room temperature
  • 1 large egg
  • 0.5 teaspoon almond extract
  • 1 cup sour cream
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 9x13-inch baking dish.
  • Combine the rhubarb, strawberries, and 1/4 cup of sugar in a bowl. Transfer the fruit mixture to a prepared baking dish and sprinkle the remaining 1/4 cup of sugar on top.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, cream together 2/3 cup sugar and butter with an electric mixer until fluffy, about 4 to 5 minutes. Mix in egg and almond extract until combined, about 3 minutes. Gradually add flour mixture and sour cream, alternating between the two, until just combined. The batter will be thick.
  • Distribute batter evenly on top of rhubarb mixture.
  • Bake until a toothpick inserted in the center comes out clean, approximately 45 minutes in the preheated oven.
