Tropical sweet potato casserole with coconut, pineapple, and pecan crumble topping - a deliciously sweet side dish perfect for any meal!
Ingredients:
  • 1 (8 ounce) can crushed pineapple, drained
  • 0.5 (14 ounce) bag flaked coconut, or more to taste
  • 3 cups cooked mashed sweet potatoes
  • 1 cup white sugar
  • 2 eggs
  • 0.33333334326744 cup milk
  • 0.5 cup butter, melted
  • 0.33333334326744 cup all-purpose flour
  • 1 cup firmly packed brown sugar
  • 0.33333334326744 cup butter, melted
  • 1 cup finely chopped pecans
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • In a large mixing bowl, blend pineapple, coconut, sweet potatoes, white sugar, eggs, vanilla extract, milk, and 1/2 cup of melted butter until smooth. Spread the mixture into the prepared pan. In another bowl, combine flour, brown sugar, 1/3 cup of butter, and pecans. Sprinkle the pecan mixture over the batter.
  • Bake until the casserole is bubbling and the topping is golden brown, approximately 30 minutes in the preheated oven.
