Creamy azuki bean ice cream, a beloved treat in Hawaii, the Philippines, and beyond, made from scratch.
Ingredients:
  • 1 cup dry adzuki beans
  • 0.33333334326744 cup white sugar
  • 2 teaspoons lemon juice
  • 3.5 cups water
  • 1 cup heavy cream
  • 4 egg yolks
  • 0.66666668653488 cup white sugar
Instructions:
  • Combine azuki beans, 1/3 cup sugar, lemon juice, and water in a saucepan. Bring to a boil and simmer uncovered for 3 minutes. Reduce heat to low and simmer for 2 1/2 to 3 hours until beans are tender and liquid reduces to 3 cups. Add more water if needed.
  • Pass the bean mixture through a sieve, using a wooden paddle to discard the bean skins. Chill in the refrigerator for approximately 2 hours until cold.
  • In a saucepan, combine milk and cream and bring to a boil. Meanwhile, whisk egg yolks and 2/3 cup of sugar in a bowl. Once milk and cream boil, slowly mix some hot liquid into the yolks, then pour yolk mixture back into the pan. Cook until thickened, about 5 minutes. Remove from heat, stir in vanilla, and chill before enjoying.
  • Combine the chilled mixtures and transfer the mixture to an ice cream maker. Freeze as per the manufacturer's guidelines.
