Green Tea and Azuki Bean Bundt® Cake

Green tea and azuki bean Bundt® cake: a subtly sweet and moist brunch treat with a pop of green tea flavor.
Ingredients:
  • 2 cups white sugar
  • 1 cup butter, softened
  • 1 cup milk
  • 0.5 cup vegetable oil
  • 5 eggs
  • 3 cups all-purpose flour, sifted
  • 1 tablespoon matcha green tea powder, plus more for dusting
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 (18 ounce) can azuki beans, drained
  • 1 teaspoon confectioners' sugar, or to taste
Instructions:
  • Heat the oven to 325 degrees F (165 degrees C) and generously grease a 12-cup fluted tube pan like a Bundt® pan.
  • In a bowl, use an electric mixer to combine white sugar, butter, milk, and vegetable oil until smooth and creamy. Add eggs one at a time, beating well after each addition.
  • Combine flour, green tea powder, baking powder, and salt in a bowl. Gently incorporate into the creamed butter until smooth. Fold in azuki beans and transfer batter to the prepared tube pan.
  • Bake the cake in the preheated oven for about 70 minutes or until a toothpick inserted comes out clean. Let it cool.
  • Flip the cake onto a serving plate and sprinkle with green tea powder and confectioners' sugar.
