Involve kids in making gluten-free green tea and lemon cookies!
Ingredients:
  • 2.25 cups brown rice flour
  • 0.75 cup packed brown sugar
  • 0.25 cup pecans, coarsely chopped
  • 1 teaspoon baking soda
  • 1 teaspoon lemon zest
  • 2 green tea bags (such as Organo™ Gold)
  • 0.25 cup agave syrup
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfect cooking temperature.
  • Combine brown rice flour, brown sugar, pecans, baking soda, and lemon zest in a mixing bowl. Empty tea bags into the bowl. Incorporate butter, agave syrup, and vanilla extract. Mix with a fork until dough forms.
  • Shape the dough into 1-inch balls and transfer them onto a baking stone.
  • Bake in the preheated oven for 11 to 13 minutes until edges are lightly browned. Let cool for 1 minute before transferring to a cooling rack. Gently press any broken cookies back together and allow to cool. Repeat with the rest of the cookie dough.
