No-bake cheesecake with vibrant matcha green tea and sweet honey.
Ingredients:
  • 1 (4.8 ounce) package graham crackers, crushed
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons green tea powder (matcha)
  • 0.5 cup warm water
  • 2 tablespoons unflavored gelatin
  • 0.5 cup cold water
  • 2 cups whipping cream
  • 2 (8 ounce) packages cream cheese, at room temperature
  • 0.25 cup honey
  • 2 eggs
Instructions:
  • Mix the graham cracker crumbs and 2 tablespoons of sugar in a bowl. Pour in the melted butter and stir until well combined. Press the mixture into the bottom of a 9-inch springform pan lined with waxed paper and set aside.
  • Mix the tea powder into the warm water and let it sit. Sprinkle the gelatin over the cold water and set aside.
  • In a clean mixing bowl, whip the cream until stiff peaks form, then set it aside. In the same bowl, beat together cream cheese, 1/2 cup sugar, vanilla, and honey. Add eggs one at a time, mixing until well combined. Microwave the gelatin mixture for about 45 seconds until melted. Incorporate the melted gelatin and tea into the cream cheese mixture, then gently fold in the whipped cream until smooth. Pour the mixture into the springform pan and refrigerate for 7 hours to overnight before unmolding and serving.
