Flavorful kale and adzuki bean dish, versatile as a side or vegetarian main served with rice. Simply delicious!
Ingredients:
  • 1 cup uncooked adzuki beans
  • 1 tablespoon olive oil
  • 2 cloves garlic, peeled and crushed
  • 6 cups roughly chopped kale
  • 2 tablespoons water
  • 0.25 cup tamari
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • salt and pepper to taste
Instructions:
  • In a medium saucepan, cover adzuki beans with water. Boil, then simmer until tender, 30 to 45 minutes.
  • In a skillet, sauté garlic in olive oil over medium heat for about 1 minute. Add kale and 2 tablespoons water, then stir in tamari, cumin, and coriander. Mix in adzuki beans and simmer covered on low heat for 20 minutes until kale is tender. Season with salt and pepper to taste.
