Kale and onion scrambled eggs with gooey mozzarella.
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup of chopped onion
  • Pinch of red pepper flakes
  • 1 ounce fresh kale, de-stemmed and thinly sliced (about 1 cup)
  • 4 eggs, beaten
  • 1/2 cup of grated mozzarella cheese
  • 1/2 teaspoon Italian seasoning (dried rosemary, oregano, thyme, basil)
  • Salt and freshly ground black pepper to taste
Instructions:
  • Sauté onions and red pepper flakes: Heat olive oil in a non-stick pan over medium-high heat. Add chopped onion and red pepper flakes once the oil is hot. Sauté for 1 minute.
  • Introduce kale: Introduce the thinly sliced kale to the pan, combining it with the onions and olive oil. Sauté briefly until the kale just begins to wilt.
  • Reduce heat to medium and gently pour in the beaten eggs. Continuously stir until the eggs start to thicken and set.
  • Stir in shredded mozzarella cheese and Italian seasoning until the cheese is melted and the eggs are cooked. Season with salt and pepper to taste.
