Ingredients:
  • 4 eggs
  • 41.20 gm skim milk
  • 20.00 ml finely-chopped chives
  • olive oil cooking spray
  • 2 slices rye bread
  • 4 slices smoked salmon
  • 250.00 ml baby spinach
Instructions:
  • Combine eggs, milk, chives, salt, and pepper in a jug; whisk until small bubbles form.
  • 1. Preheat a non-stick frying pan over high heat and then lower the heat to low. Lightly coat the pan with oil spray. 2. Give the egg mixture another quick beat and pour it into the pan. 3. Once the egg starts to set, gently stir it with a wooden spoon while tilting the pan to ensure all the uncooked egg touches the surface. 4. Cook until the eggs form creamy curds. 5. Remove the pan from the heat right away.
  • Toast the bread until golden brown. Then, layer the toast with fluffy scrambled eggs, savory smoked salmon, and crisp spinach. Finish with a sprinkle of salt and freshly ground black pepper. Enjoy your delicious creation!
