Salmon Scrambled Eggs

Whisked eggs with smoked salmon and melted cheese for a quick and tasty skillet meal in just 15 minutes.
Ingredients:
  • 4 eggs
  • 1 tablespoon milk
  • 1/4 teaspoon dried dill weed
  • 1/8 teaspoon pepper
  • Dash salt
  • 1 tablespoon butter or margarine
  • 1/4 cup sliced green onions
  • 1 (7 1/4-oz.) can red salmon, drained, bones and skin removed, flaked
  • 1 oz. (1/4 cup) shredded Jarlsberg or Swiss cheese
Instructions:
  • In a medium bowl, whisk together eggs, milk, dill, pepper, and salt until well combined.
  • In a nonstick skillet over medium-low heat, melt butter. Add onions and cook for 2 to 3 minutes until crisp-tender. Gently stir in the egg mixture with salmon and cook until the eggs are set but still moist, stirring constantly.
  • Sprinkle cheese over the eggs, cover, and cook until the cheese is fully melted, approximately 1 minute.
