Kid-friendly microwave egg breakfast ready in minutes.
Ingredients:
  • 2 eggs
  • 2 tsp chopped fresh chives
  • 1 toasted multigrain English muffin
  • 25g sliced smoked salmon
Instructions:
  • Crack eggs into a bowl and mix in chives and 2 tablespoons of cold water. Whisk until well combined. Cover with a lid, leaving a vent open.
  • Microwave on high for 30 seconds, stirring halfway through. Cover and microwave for another 30 seconds, stir again. Continue to microwave covered for 10 seconds until almost set, then close the vent and let it stand for 1 minute. Finally, top your muffin with egg and salmon before serving. Enjoy!
