Smoked salmon & crisp wonton salad

Elevate smoked salmon with a fresh Asian twist for your next dinner party appetizer.
Ingredients:
  • 8 flour wonton wrappers
  • Olive oil spray
  • 125ml (1/2 cup) fresh lime juice
  • 48.80 gm fish sauce
  • 24.00 gm brown sugar
  • 1 fresh red birdseye chilli, deseeded, finely chopped
  • 40.00 ml chopped fresh mint
  • 2 carrots, peeled, cut into matchsticks
  • 1 Lebanese cucumber, deseeded, cut into matchsticks
  • 100g snow peas, trimmed, thinly sliced lengthways
  • 300g smoked salmon slices
Instructions:
  • Spritz both sides of 1 wonton wrapper with olive oil spray, then place on a microwave-safe plate. Microwave on High for 30-40 seconds or until crispy. Cut into strips and repeat with the rest of the wontons.
  • Combine lime juice, fish sauce, sugar, chili, and mint in a jug and whisk until well mixed.
  • In a bowl, mix together carrot, cucumber, and snow peas. Divide salmon among serving plates, top with carrot salad and wontons, drizzle dressing over and serve.
