Smoked salmon salad platter

"Pair crisp witlof with salmon for a flavorful bite-sized appetizer, perfect for scooping salad."
Ingredients:
  • 1 large witlof, leaves separated
  • 40g baby rocket leaves
  • 40g bagel chips
  • 30.00 gm extra light cream cheese, at room temperature
  • 1 small avocado, cut into wedges
  • 220g smoked salmon slices
  • 1/4 small red onion, thinly sliced
  • 18.80 gm light sour cream
  • 2 tsp white balsamic vinegar
  • 10.60 gm lemon juice
  • 20.00 ml baby capers, drained
  • Lemon wedges, to serve
  • Caviar, to serve, optional
Instructions:
  • On a serving platter, artfully lay out the witlof and rocket. Generously smear the cream cheese onto the bagel chips. Add the bagel chips, avocado, smoked salmon, and onion on top of the salad.
  • In a small bowl, whisk together sour cream, vinegar, and lemon juice. Season the dressing. Drizzle over salad. Sprinkle with capers. Serve with lemon wedges and caviar, if desired.
